Those guests are going to be expecting a delicious dinner when they come over, so it is safe to say you might want to put on your chef’s hat. If you are low on time or just want to make something really easy that your guests are sure to love, we’ve got you covered. Below are two gratifying beef recipes that are easy to make.

Beef VegetableStir-Fry:

This is probably the easiest beef recipe to make. Not only does it have delicious tender beef, but also some healthy nutrients all in one tasty dish.

Ingredients:

1 pound of ground beef

2 tablespoons of butter (or ghee)

½ white or yellow corn, diced up

2 cloves of garlic, minced

2 peeled and sliced carrots

1 small head of broccoli

2-3 celery stalks, sliced

½ tablespoon of minced ginger

½ tablespoon of crushed pepper

⅓ cup of low sodium soy sauce

Salt for taste

Ground pepper for taste

The juice of 1 lime

Instructions:

1. On medium heat, melt the butter or ghee in a large wok or skillet. When it gets hot enough, add the onion and garlic. Let this cook for about 3 minutes.

2. Add the celery, carrots, and broccoli, and stir it all up.

3. Next, add the ground beef with a little bit of salt. Begin “browning” the beef, or break it apart with a wooden spoon, until the beef is thoroughly cooked. This may take around 10 minutes.

4. Drain the stir fry to remove any excess liquid from the beef.

5. Return your stir fry to the skillet and set it for medium heat. Next, add the minced ginger, juice of the lime, the soy sauce, and the crushed red pepper.

6. Lastly, just simply stir all of the ingredients together. You will have to stir it for about 5-10 minutes until most of the liquid has soaked up.

Enjoy!

Note: Most people serve this on a bed of quinoa, Jasmine rice or cauliflower rice.

Beef and Stout Skillet Pie:

This is not only very easy to make but it also fits right into the holiday spirit! However, if you buy the crust from the store, it makes it that much easier. The prep-time for this delicious hearty filling is about 20 minutes, and the total cooking time is about 1 hour.

Ingredients:

1 pound of lean ground beef

4 ounces of small shitake mushrooms

1 tablespoon of olive oil

2 tablespoons of tomato paste

1 tablespoon of fresh thyme leaves

½ cup of frozen pearl onions

2 cups of frozen butternut squash pieces

3 tablespoons of all-purpose flour

1 cup of frozen peas

8 ounces of stout

1 large egg

1 refrigerated rolled pie-crust

Pepper

Kosher salt

Instructions:

1. First, heat up your oven to 375 degrees Fahrenheit. Next, heat up your oil in a nine-inch cast-iron skillet over the medium heat setting. Next, add your mushrooms, beef, and the ¾ tablespoons of salt and pepper. Let this all cook while breaking apart the beef until it is “browned” with your wooden spoon. This will take around 4-6 minutes. Once cooked, spoon this off and throw away any excess fat.

2. Next, you want to add your tomato paste and let it cook, while you stir it up for about 2 minutes. Next, add the thyme leaves and onions. Sprinkle this with your all-purpose flour and let it cook as you stir for about 30 seconds or so.

3. Next, add your stout and simmer until the liquid thickens which will take one minute. Next, add your ½ cup of water, bringing it to a simmer. Add your peas and squash, return it to a simmer, then take it off the heat. (This whole step should take only 2-3 minutes)

4. Finally, unroll your pastry onto a cutting board and brush it with the large egg and cut an “X” in the centre. Next, lay the dough above the cooked beef mixture with the egg side up while lightly pressing the edges around the interior of the skillet.

Let this bake for 30-35 minutes until golden brown. Let this rest for 5 minutes before you serve it.

Enjoy!
